Hm. Off the top of my head, I don't know of anything along those lines. There are a couple of decent fics based around Cliff reading the diary, but if I ever came across anything that's as detailed as you describe, I've forgotten it. And if I've forgotten it, it means I didn't think it was worth remembering.
Thing is, to write something you describe, the writer would have to invent so much - one of the reasons I wouldn't attempt it is because - believe it or not - I do like to base as much as I can in my fics on things that we actually KNOW (or can reasonably assume) from the show. Okay, so I take a lot of liberties in some cases, but I think that if you're going to stay true to the characters, you do need to steer clear of making up too much background. If that makes any sense whatsoever.
Also - remember, Josh only gave Cliff an hour to read the diary, so I doubt he'd have been able to read it in that much detail anyway!
Anyway, I'm really glad you've enjoyed the fics I have written, and that the recommendations have been useful - thanks for letting me know :-)
